Elote Guacamole

Ingredients
  

  • 4 avocados pealed pitted, & diced
  • 1 cup corn grilled and kernels cut off Cobb
  • 1/2 cup finely chopped Fully Cooked Bacon
  • 1 lemon grilled & juiced
  • 1 ounce pickled JalapeƱo liquid & peppers
  • 1 tablespoon diced cilantro
  • 3 green onions diced
  • 1/4 cup red onion diced
  • 1/2 tablespoon fine pink sea salt
  • 1 tbsp Chosen Foods avocado mayo
  • 1 cup cherry tomatoes diced

Instructions
 

  • Using a fork or potato masher smash avocados until you have a chunky consistency.
  • Gently mix in the rest of the ingredients until they are throughly incorporated.
