Carne Asada Tacos or Flank Steak Tacos (as they are also known) has always been my idea of the perfect classic taco. Growing up my dad always made Carne Asada Tacos and I think they are among the most tasty tacos in the world of tacos. Not only are Carne Asada Tacos yummy but they are extremely easy to cook and very budget friendly. The carne asada portion of the taco however is only part of the taco equation. Picking the correct tortilla is just as important as grilling the carne asada correctly. To make the most amazing carne asada tacos I always pair the steak with grilled La Tortilla Factory low carb tortillas.
In all honesty you can use any cut of beef normally used for steak as the Carne Asada. According to my Tia (aunt in Spanish) Carne Asada loosely translates into English as fire roasted meat. Over the years I’ve used top sirloin and ribeye steak for my carne asada but I think my favorite cuts to use are skirt or flank steak. Skirt and flank steak are very lean but full of the great meaty flavor that makes carne asada amazing. Because of the fact that both cuts are also tougher they need a little extra attention to ensure that the carne asada comes out tender and juicy.
Grilling Carne Asada
Grilling the best carne asada is super easy by following a couple easy steps.
First you know want to start with the best possible cut of beef you can find. Since skirt and flank steak are tougher I try to use the best quality beef I can find. Normally I use Prime or American Wagyu skirt or flank steak when I can find them. That’s not always possible though so when you’re picking out the beef at the store try to find the pieces that have the most marbling. When you’re looking at marbling you want to find the beef with the most thin white striations of “fat” that are speckled in the beef. To put it simply marbling is fat and fat is flavor.
Secondly when grilling carne asada you want to make sure you’re cooking the beef using the hot and fast grilling method. Cooking the meat too long or at lower temperatures will result in tough meat which is no bueno. Whether you are using a gas grill, charcoal grill, or an indoor grill you want it to be very hot before you add your meat to it.
Carne Asada Taco

Ingredients
- 1 La Tortilla Factory Barbacoa Sauce Starter
- La Tortilla Factory Tortillas
- 1 cup avocado oil
- 2 flank or skirt steaks
Instructions
- In a large bowl combine La Tortilla Factory Barbacoa sauce starter and avocado oil. Mix until throughly incorporated.
- Coat flank steak with marinade and refrigerate for 2-12 hours. Once it's ready remove from the marinade and lightly pat dry the flank steak with a paper towel.
- Grill on a high heat grill for about 3-4 minutes on each side and until it reaches desired doneness.
- Remove from heat and rest for 10 minutes. Slice against the grain and serve with on grilled La Tortilla Factory tortilla. Top with Charred Romaine Slaw & Elote Guacamole and enjoy.
Charred Romaine Slaw
Ingredients
- 1 La Tortilla Factory Baja Sauce Starter
- 4 romaine hearts cut in half lengthwise
- 1 lemon grilled & juiced
- Chosen Foods Avocado oil spray
- 1 cup broccoli or Cole slaw
- 1/4 cup red onion diced
- 1 tbsp cilantro chopped
- 1/2 cup Chosen Foods avocado mayo
Instructions
- Spray avocado oil on both sides of the romaine hearts. Place romaine hearts on a medium high grill until they have charr marks. Grill for approximately 2-3 minutes.
- Slice the romaine thinly and cool completely before use.
- Place the romaine and the remainder of the ingredients in a bowl and mix until throughly incorporated.
- Refrigerate until served.
Elote Guacamole
Ingredients
- 4 avocados pealed pitted, & diced
- 1 cup corn grilled and kernels cut off Cobb
- 1/2 cup finely chopped Fully Cooked Bacon
- 1 lemon grilled & juiced
- 1 ounce pickled JalapeƱo liquid & peppers
- 1 tablespoon diced cilantro
- 3 green onions diced
- 1/4 cup red onion diced
- 1/2 tablespoon fine pink sea salt
- 1 tbsp Chosen Foods avocado mayo
- 1 cup cherry tomatoes diced
Instructions
- Using a fork or potato masher smash avocados until you have a chunky consistency.
- Gently mix in the rest of the ingredients until they are throughly incorporated.
Although the always yummy and classic Carne Asada Taco is my goto I often find myself trying new taco creations like my Fried Chicken Taco!
