  • Zucchini
  • Cherry Tomatoes

How to Make Easy (Almost) Vegetarian Southwestern Lasagna 

Preheat the oven or grill (using indirect heat) to 400 degrees

In a 9×13-inch casserole dish or equivalent baking dish, begin building your pasta. Start by spreading a layer of Kale Pesto Sauce on the bottom of the dish. Then layer zucchini, ground chicken, ground turkey, bell peppers, and tomatoes. Top with pasta sauce and shredded mozzarella cheese. 

Repeat the process until you’ve used all the ingredients. Top with sliced fresh mozzarella and parmesan cheese.

Place the lasagna in the preheated oven or grill and cook for 40-45 minutes. Broil for a few minutes to get a nice golden crust on the top of the lasagna. 

Let the lasagna rest for 10-15 minutes before slicing. 

Tips for Making Easy (Almost) Vegetarian Southwestern Lasagna 

Lightly grill the Zucchini, Tomatoes, and Sweet Peppers beforehand to enhance their flavors.

Adding other veggies to the lasagna is always a great option. Try to add dry veggies rather than wet ingredients such as corn, baby carrots, or sweet potatoes.

Can I Bake Lasagna on a Gas Grill?

Yes, you can! Just preheat your grill to 400 degrees F using indirect heat. Once your grill is preheated, and your lasagna is prepped, place the lasagna on your grill and cook for 40-45 minutes. You can also broil your lasagna for a few minutes to get a nice golden crust on the top.

Is Lasagna Baked or Broiled?

If baking your lasagna in your oven, you can bake it covered at 375° for 30 minutes. Then, uncover the lasagna and bake it for an additional 10 minutes or until the cheese is bubbly. You can add 3-5 minutes of broiling time at the end to brown the cheese on top of the lasagna if that is what you prefer.

Should Lasagna be Cooked Covered or Uncovered?

You should cover your lasagna with aluminum foil before cooking. Just make sure to tent the foil slightly so that it doesn’t touch the lasagna. Bake your lasagna while it’s covered, and then remove the foil for the last 10 minutes or so. This will allow your lasagna to have a bit more of a crusty top and edges.

Can You Use Regular Lasagna Pasta Without Boiling?

Although I love using zucchini in my lasagna you can use traditional pasta with no problem. You should not use regular lasagna without boiling. You can, however, buy specific lasagna noodles that do not require boiling. However, if you use regular lasagna noodles for your lasagna, you should boil them before layering them.

  • 1 cup cherry tomatoes cut in half
  • 1 cup sweet peppers diced
  • 1 pound ground turkey cooked
  • 1 pound ground chicken cooked
  • 24 ounces pasta sauce
  • 2 cups Fresh Cravings Salsa Chucky Restaurant Style
  • 24.5 ounces Sonoma Gourmet Kale Pesto with White Cheddar Pasta Sauce

  • 1 ball fresh mozzarella sliced
